Lamb shanks

Ingredients
2 tbsp olive oil
4-5 lamb shanks
3 sticks of celery
2 carrots
1 large onion
6 garlic cloves
3 fresh tomatoes
½ cup chopped pumpkin
½ red pepper
2 large sprigs of rosemary
1 teaspoon of harissa
250ml chicken stock
1 teaspoon of salt
Ground black pepper to your taste
Method
- Set oven to 180ºc if cooking in oven
- Put pressure cooker or dutch oven on medium heat on cook top and add oil
- Finely chop onion, garlic, celery and tomato and add to pot
- Chop carrot and red pepper and add to pot
- Add harissa (this is optional but gives a lovely flavour and heat). Give it a good stir
- Place the lamb shanks onto the veggies
- Cover with remaining ingredients
- Bake in oven for 3 hours or pressure cook for 50 minutes and leave to de-pressure/cool down without steam release
