Lamb shanks

Some words: Pressure cooker or slow cooked in the oven, this is proper delicious. You don't need to start it off on the hot plate if you are short of time - you can just set it going from all cold and raw.

Ingredients

2 tbsp olive oil
4-5 lamb shanks
3 sticks of celery
2 carrots
1 large onion
6 garlic cloves
3 fresh tomatoes
½ cup chopped pumpkin
½ red pepper
2 large sprigs of rosemary
1 teaspoon of harissa
250ml chicken stock
1 teaspoon of salt
Ground black pepper to your taste

Method

  1. Set oven to 180ºc if cooking in oven
  2. Put pressure cooker or dutch oven on medium heat on cook top and add oil
  3. Finely chop onion, garlic, celery and tomato and add to pot
  4. Chop carrot and red pepper and add to pot
  5. Add harissa (this is optional but gives a lovely flavour and heat). Give it a good stir
  6. Place the lamb shanks onto the veggies
  7. Cover with remaining ingredients
  8. Bake in oven for 3 hours or pressure cook for 50 minutes and leave to de-pressure/cool down without steam release
