Some words: My classic go to hummus recipe (which I never use because I mostly wing it. I sometimes also add ½ teaspoon of cumin and coriander seeds, toasted and beaten to a powder

You will need a blender, stick blender or strong arm in a massive pestle and mortar for this recipe.

Ingredients

2 cups cooked chickpeas 1/3 cup water ¼ cup tahini (hulled or unhulled - whatever floats your boat) Juice of 2 lemons (minimum ¼ cup) 2 garlic cloves 1 tsp salt ¼ cup good olive oil Black pepper to taste

Method

  1. Put all ingredients except olive oil into your blender jug (put the tahini in last as it is gloopy and will set at the bottom and not mix in properly).
  2. Once smooth, slowly pour in olive oil as the blender is still running. The hummus will go thicker and shiny.
